Crispy Aloo Tikki Chaat Recipe: Make Delhi-Style Street Food at Home

Crispy aloo tikki topped with chilled curd, sweet tamarind chutney, spicy green chutney and crunchy sev is one of Delhi's most loved street-food combinations. The contrast between the hot, golden tikki and the tangy, sweet and spicy toppings makes every bite delicious..The good news is that you can recreate this popular street-food snack at home using everyday ingredients. Here's an easy recipe for crispy aloo tikki chaat that you can serve during evening tea, family gatherings or weekend cravings..

Ingredients For the aloo tikki:

- 4 medium potatoes

- 3 tablespoons cornflour or rice flour

- 1 teaspoon roasted cumin powder

- ½ teaspoon red chilli powder

- ½ teaspoon garam masala

- Salt to taste

- Oil for shallow-frying

For the chaat toppings:

- 1 cup thick curd, whisked

- ½ cup boiled chickpeas, optional

- 3–4 tablespoons tamarind chutney

- 2 tablespoons green chutney

- ½ teaspoon roasted cumin powder

- Chaat masala to taste

- Red chilli powder to taste

- Sev, as needed

- Chopped coriander leaves

How to Make Crispy Aloo Tikki Chaat

Step 1: Boil and mash the potatoes

Boil the potatoes until tender. Allow them to cool, peel them and mash thoroughly. Avoid leaving large lumps because they can make the tikkis break while cooking..

Step 2: Prepare the tikki mixture

Add cornflour or rice flour, roasted cumin powder, red chilli powder, garam masala and salt. Mix until the ingredients combine into a firm mixture. If it feels too sticky, add a little more flour..

Step 3: Shape the tikkis

Divide the mixture into equal portions and shape them into round, flat patties. Keep the thickness even so they cook uniformly..

Step 4: Shallow-fry until golden

Heat oil in a pan over medium heat. Place the tikkis carefully in the pan and cook until the bottom turns golden and crisp. Flip and cook the other side. Transfer them to a plate when both sides are crispy..

Step 5: Assemble the chaat

Place one or two hot tikkis on a serving plate. Add boiled chickpeas if desired, followed by whisked curd, tamarind chutney and green chutney..

Step 6: Add the final toppings

Sprinkle roasted cumin powder, chaat masala and a little red chilli powder. Finish with sev and fresh coriander. Serve immediately for the best contrast between crispy tikki and creamy toppings..

Tips for Street-Style Aloo Tikki

- Let the boiled potatoes cool before mashing to help control excess moisture.

- Use medium heat so the tikki develops a crisp crust without burning.

- Make sure the pan is hot before adding the patties.

- Add curd and chutneys just before serving to prevent the tikki from becoming soggy.

- For extra crunch, serve with finely chopped onion and pomegranate seeds..

Is Aloo Tikki Chaat Different From Aloo Tikki?

Yes. Aloo tikki is the potato patty itself, usually served crisp and hot with chutney. Aloo tikki chaat is the assembled dish, where the tikki is topped with ingredients such as curd, chutneys, spices and sev. Toppings vary from one street-food vendor to another..
