Craving the spicy, buttery tawa pulao served at Mumbai street-food stalls? You can recreate this popular Maharashtrian street-food favourite at home using cooked rice, vegetables, pav bhaji masala, tomatoes and a little butter..Mumbai-style tawa pulao is known for its vibrant colour, tangy flavour and spicy masala coating. It is often prepared on a large, hot iron griddle, or tawa, where the rice and vegetables are tossed together until every grain absorbs the flavour of the masala..The best part is that you do not need a restaurant-style kitchen to make it. With a few everyday ingredients and the right cooking technique, you can prepare delicious street-style tawa pulao in around 35 minutes..

How to Make Mumbai-Style Tawa Pulao

Step 1: Prepare the rice

Cook the rice until the grains are tender but not mushy. Spread it on a plate and allow it to cool slightly. If using leftover rice, separate the grains gently with a fork before cooking..

Step 2: Heat the tawa

Place a large tawa or wide frying pan over medium-high heat. Add the oil and butter. Once the butter melts, add the cumin seeds and let them sizzle for a few seconds..

Step 3: Cook the onions

Add the chopped onion and green chillies. Sauté for 2–3 minutes until the onion softens. Add the ginger-garlic paste and cook for another 30–45 seconds, stirring so it does not burn..

Step 4: Add the vegetables

Add the chopped capsicum, carrot, green peas and boiled potato, if using. Cook for around 3–4 minutes. The vegetables should soften while retaining a little bite..

Step 5: Prepare the street-style masala

Add the chopped tomatoes, pav bhaji masala, red chilli powder, turmeric and salt. Mix well and cook for 4–5 minutes, until the tomatoes become soft and the masala thickens..If the mixture starts sticking to the pan, add 1–2 tablespoons of water. Mash a few pieces of tomato and potato into the masala for a thicker, more flavourful coating..

Step 6: Toss in the rice

Add the cooked rice in batches. Gently toss it with the masala until the grains are evenly coated. Avoid stirring too aggressively, as this can break the rice..Cook for another 2–3 minutes over medium-high heat. Let the rice make contact with the hot pan between gentle tosses to develop that characteristic street-style flavour..

Step 7: Finish and serve

Switch off the heat. Add the lemon juice and chopped coriander, then mix gently. Taste and adjust the salt, spice or lemon juice if needed..Serve the pulao immediately with lemon wedges, chopped onion and a little extra butter if desired..

Restaurant-Style Tips for the Perfect Tawa Pulao

1. Use cooled rice: Freshly cooked, steaming rice can turn mushy when mixed with masala. Slightly cooled rice holds its shape better..

2. Do not skip pav bhaji masala: It gives Mumbai-style tawa pulao its signature street-food flavour. Start with 1½ tablespoons and adjust to taste..

3. Cook the tomato masala properly: The tomatoes should soften and become thick before you add the rice. This helps the flavour coat the grains instead of making them watery..

4. Use a wide, hot pan: A large tawa or wide frying pan gives the rice more contact with the hot surface. If your pan is small, cook in batches rather than overcrowding it..

5. Balance butter and tanginess: Butter adds richness, while lemon juice brightens the flavour. Add lemon at the end so you can control the tanginess..

6. Keep the vegetables slightly firm: Overcooked vegetables can make the pulao heavy and soft. Cook them until just tender before adding the rice..

7. Adjust the spice level: Reduce the green chillies and chilli powder for a milder version. For a spicier street-style taste, increase them gradually rather than adding too much at once..

Common Mistakes to Avoid

- Using wet or overcooked rice can make the pulao sticky.

- Adding rice before the tomato masala has thickened can result in a soggy dish.

- Using too much water can dilute the spices and soften the grains.

- Overmixing can break the rice and turn the pulao mushy.

- Adding too much pav bhaji masala at once can overpower the vegetables..

What to Serve with Tawa Pulao

Mumbai-style tawa pulao tastes delicious on its own, but you can serve it with plain curd, cucumber raita, sliced onions or lemon wedges. For a fuller street-food-style meal, pair it with pav, papad or a simple salad..
